Dear Lasagna Rolls,

You were delicious, if I do say so myself. And Adam and roommate Linda agreed! I am so glad that my combining of two recipes with my own alterations created something so delicious. I present to you... SPINACH CHICKEN LASAGNA ROLLS!







Spinach Chicken Lasagna Rolls
Makes approximately 10 rolls
10 lasagna noodles
1 1/2 cups mozzarella cheese (or other cheese combinations)
1 tsp onion salt
1 tsp crushed red pepper
1/2 cup milk
2 cups spinach
2 chicken breasts
1 jar Prego
Preheat oven to 375 degrees
Cook lasagna noodles
Cook chicken breasts and dice
Pour Prego sauce into 9x13 pan until entirely covered
Combine milk, cheese, onion salt, crushed red pepper, spinach, and chicken breast dices in a bowl
Spread 1/2 cup mixture over each noodle and roll up jelly-roll style
Place rolls into pan seam down
Once all the rolls are in the pan, pour the rest of the Prego sauce over the top, cover with tin foil, and place in oven for 30 minutes

After the 30 minutes, pull the rolls out, take off the cover, top with any leftover cheese if you desire, and enjoy!

I was really pleased with how they turned out. And they are delicious with a little french bread and salad... or whatever other side you want.
